Recipe Makes 2 Servings

  • 2 (6oz) Fillets Salmon
  • 2 minced garlic cloves
  • 6 tbsp light olive oil
  • 1 tsp dried basil
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
1. Prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice, and parsley.
2. Place Salmon fillets in a glass baking dish, and cover with the marinade mixture.
3. Marinate in the refrigerator about 1 hour, turning occasionally.
4. Preheat Oven to 375 degrees F.
5. Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in the glass dish, and bake 35-45 minutes, until easily flaked with a fork.

Serve with a side of sauteed veggies, and brown rice.
