Chicken Pizza

Chicken Pizza
  • 4 five ounce skinless chicken breasts OR Tenderloins for Smaller Pizzas
  • 1 bell pepper
  • 1 onion
    (OR whatever veggies you want to put on top of your pizza)
  • marinara sauce
  • part-skim mozzarella cheese
1. Preheat the oven to 375 degrees F.
2. Line a baking sheet with aluminum foil, and coat with oil spray.
3. Pound 4 five-ounce skinless chicken breasts very thin using a mallet or heavy can (this will be your “crust”)
4. Arrange the chicken breasts on the baking sheet.
5. Bake 15 minutes or until fully cooked.
6. Sauté 1 thinly sliced bell pepper, and 1 thinly sliced onion in a skillet until soft and browned.
7. Top each cooked chicken breast with 2 tbsp marinara sauce, 1/4 of the sautéed vegetables and 2 tbsp part-skim mozzarella cheese.
8. Place the chicken back in the oven until the cheese is melted and bubbly, about 3 min.
