Chicken Taco Salad

Chicen Taco Salad
  • 6 oz Boneless Skinless Chicken Breast
  • 1 tbsp Coconut oil or butter
  • 1/4 c. Onion (thinly sliced)
  • 1/2 c Tomato (large diced)
  • 1/4 c. Corn (frozen or canned)
  • 3 c. Fresh Spinach
  • 1/3 c Whole Wheat Tortilla Chiops (crushed)
  • 1/2 c. Aged White Cheddar (or yellow cheddar grated)
1. Saute chicken and set aside.
2. Add oil and onions to the pan, stirring frequently until onions are lightly browned, then add tomato and corn.
3. Cook for 1 minute more.
4. Remove from heat and set aside to cool.
5. Combine all ingredients in a large mixing bowl.
6. Drizzle one serving of your favorite dressing on the salad and serve.
