Chocolate Peanut Butter Protein Bites

Makes from 15-20 large snack balls

  • 3 c. Rolled Oats (old fashioned oats)
  • 1 c. Protein Powder (of your choice)
  • 1/4 c. Unsweetened Cocoa Powder
  • 1 c. Crispy Cheerios Cereal (I used All-Bran)
  • 1 tsp. Sea Salt
  • 1 c. All Natural Creamy Peanut Butter (or Almond Butter)
  • 1 c. Maple Syrup
  • 2.5 tsp. Vanilla Extract
1. Using a hand mixer, beat together peanut butter, maple syrup, and vanilla extract until smooth.
2. Add unsweetened cocoa powder and protein powder and beat until combined. It starts to get thick, so I finished using a wooden spoon and good old fashioned muscle.
3. Take a taste to see how it tastes.
4. Using a blender, process oats into flour, add to wet ingredients
5. Process crispy cereal until a crumbly texture (not complete flour) and add to ingredients
6. Add salt and mix until everything is well combined
7. Mixture should be crumbly
8. Form and roll into balls and store in an airtight container in the freezer.

You can powder the top with cinnamon OR stick toothpicks in them when you freeze them to make a little protein pop bite.
