  • 1/2c. Black Beans (drained)
  • 1c. Milk
  • 1tsp Turmeric
  • 1 tsp Cayenne Red Pepper
  • 1 tsp Salt
  • 1c. Vegetable Broth
  • Olive Oil Cooking Spray
  • 1lb 5oz Ground Turkey
  • 1c. Sweet Onion (large diced)
  • 1 1/2c. Baby Carrots (Sliced thin)
  • 1 1/2c. Broccoli
  • 1 1/2c. Bell Peppers
  • 1/2c. Cashews
  • 1 1/2c. Sharp Cheddar (shredded)
1. Preheat oven to 350 degrees.
2. Add the black beans, half the milk, turmeric, cayenne red pepper and salt to a blender and puree until smooth.
3. Set aside and stir in the rest of the milk and the vegetable broth.
4. Preheat a non-stick frying pan on medium heat and lightly coat with spray.
5. Saute the turkey in batches until lightly browned, then transfer to a large casserole dish.
6. Add remaining ingredients to the casserole dish, including the pureed bean mixture, and cover. Sprinkle more black beans into the casserole.
7. Stir well to incorporate and bake for 25-30 minutes.
